Before going into the packets, these chicken breasts are browned to boost their flavor and improve their appearance. Celery takes center stage here, adding its refreshing herbal flavor.
Creamy polenta or mashed potatoes would be a perfect accompaniment.
If you are unsure if the food is done, open one of the packets to check. If it’s not ready, reseal it as best you can and return all the packets to the oven.

We enjoyed this dish. I wish I had selected smaller (I used 10-12oz breasts) and higher quality (I used Perdue) chicken. I would make again with those adjustments.
Very tasty. I was certain the chicken wouldn't cook through and opened the first packet with trepidation; it was perfectly done. The celery and fresh bay leaf gave the dish a unique taste. I served it with mashed potatoes and green beans. I would make it again.
