But all these acts of derring-do are unnecessary: just bring the sauce to a boil for a minute to burn off the alcohol, whisk, whisk, whisk, and then add the cream, whisking all the while. Absolutely yummy! I especially like the fact that there is no flambeing involved. Almost set the kitchen on fire last time. The DH has politely asked me not to do those recipes anymore. The fact that it was so easy is icing on the cake. Highly recommended!
