  • 2-1/2 lb. baby potatoes, scrubbed
  • 1/4 cup olive oil
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper

Preparation

  • Mix the potatoes in a roasting pan with 1/4 cup olive oil, 1 tsp. kosher salt, and 1/2 tsp. freshly ground black pepper. Roast in a 375°F oven, stirring from time to time, until lightly browned and tender when pierced with a skewer, 30 to 40 minutes
