A strata is essentially a savory bread pudding, and can be augmented with anything from ham to summer vegetables. Here, smoked Gouda lends a hearty richness to the classic pairing of spinach and mushrooms. Though stratas are usually associated with make-ahead breakfasts, this skillet technique lets you have it on the table in less than 30 minutes, perfect for a weeknight dinner. Serve with a simple green salad to round out the meal.

This was a wonderful weeknight meal that came together very quickly! I will definitely make this again. I followed recipe, but had to substitute sharp cheddar for the smoked Gouda, but think This recipe lends itself well to trying different variations. I baked covered according to directions, but baked uncovered 7 minutes and was perfect!!!
Really liked how this turned out. We weren't sure about the "savory bread pudding," but it was delicious. I used a bit more cheese than was recommended, but am a cheese lover. Normally non-meat dishes aren't enough for my boyfriend, but he thought this was filling enough and tasty. I went with about 7 minutes uncovered and it set fine.
