The effect that garlic has on a dish greatly depends on how it’s first prepared. Our recipes tend to call for garlic in five different forms, and we thought it might be helpful to show you what we mean when we say “minced,” “chopped,” etc. We advise you to resist the convenience of prechopped garlic. It doesn’t taste nearly as good as fresh garlic.
