Fennel is a classic flavoring for pork because it brings out the sweetness of the meat. Although this recipe is straightforward, you can make it even easier by skipping the browning step. Instead, roll the raw tenderloin in the garlic mixture and roast for about 30 minutes.

This looks like a really easy week-night dinner. I can't wait to try it!
Very tasty, moist, and savory. Served it with chive mashed potato the first night and buttered noodles as leftovers the second night. I have a well calibrated over and it took 30 min not 15 min to get to 130 degrees. That aside it will be a regular dinner with us.
