Turntable Kitchen is a wonderful, well-recognized blog that blends new, trendy ideas in both food and music. Kasey runs the kitchen on the food end of the site, while Matthew handles everything music. One of the most recent dishes to hit the blog waves is Kasey’s recipe for clams with mirin, lime and cucumber.
This dish combines the bright acidity of fresh lime juice and mirin rice wine with aromatics like lemongrass, scallions and jalapeño. Refreshing bits of cucumber provide crunch against the briny pop of the clams. And fresh basil and cilantro add a fresh flavor and fragrance to the warm, flavor-rich broth.
