Cheddar and Sausage Waffles

Yield: Makes 3 to 4 Belgian waffles

Servings: 2 to 3

Though these savory waffles are perfect for a holiday brunch, they also make a fun, change-of-pace weeknight dinner.

Ingredients

  • 4-1/2 oz. (1 cup) unbleached all-purpose flour
  • 1/2 tsp. table salt
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. freshly ground black pepper
  • 3/4 cup buttermilk
  • 1/4 cup low-fat milk
  • 1 large egg
  • 6 oz. cooked chicken apple sausage, cut into 1/4-inch dice
  • 2 oz. sharp Cheddar, grated (about 1/2 cup)
  • 5 medium scallions, thinly sliced (about 1/2 cup)
  • 3 oz. (6 Tbs.) unsalted butter, melted and cooled
  • Cooking spray for the waffle iron
  • Pure maple syrup for serving

Preparation

  • Whisk the flour, salt, baking powder, baking soda, and pepper in a large bowl. Whisk the buttermilk, milk, and egg in a medium bowl. Add to the dry ingredients and mix until just combined. Fold in the cheese, sausage, and scallions. Stir in the butter. Spray a waffle iron with cooking spray, and cook the waffles according to the manufacturer’s directions. Serve with maple syrup.

    Very easy, relatively quick recipe.Rated 4 due to mess cheese made in waffle iron and extra time involved to clean same.Will make without cheese and green onion next time for breakfast. Will also cut the butter by 2T and add 1 T of coarsely ground DeMerara sugar.
