Piquant blue cheese and buttery avocado are a great pair—just think of Cobb salad. Smoked almonds, available at grocery stores, add even more depth for a rich guacamole that’s hard to stop eating.
Make Ahead Tips
The guacamole can be made up to 1 hour ahead; cover the surface with plastic wrap and keep at room temperature.
Fun recipe because it is unique, boosting the normally tame guacamole. Unfortunately I was missing a key flavor since neither of two grocery stores carried smoked almonds. Might be a seasonal or regional thing. Before you commit to this recipe make sure to check. Not sure it was worth the trouble to use a mortar and pestle: the food processor would have been adequate.
