Champagne and other sparkling wines not only tickle the tongue with their tiny bubbles, those little bursts of air as the bubbles pop at the surface deliver aromas in the drink efficiently to your nose.

A splash of sparkling wine will liven up a Gimlet and lift your Mojito into a new dimension.  Not surprisingly, champagne also works incredibly well with the scents in floral liqueurs designed to be aromatic in the first place.

In recent years several new floral liqueurs have been brought to market, including St. Germain (elderflower), Esprit de June (grape vine flowers), Rothman and Winter Crème de Violette (violet), Crème Yvette (violet and berries), Fruit Lab Theia (jasmine), J. Witty Spirits Organic Chamomile, and Loft Liqueurs Organic Lavender.

With any of these liqueurs, add half a fluid ounce to a champagne flute and fill with sparkling wine. If you like a sweeter drink or a stronger floral scent, add more liqueur until you find the right balance.
