If you’re looking for more ways to include whole grains and leafy greens into your diet, this gratin is the perfect recipe to do just that. It comes from a blog called The Yellow House, which is written by Sarah, a 20-something who loves to share good food with great friends, and document things along the way.
As many of you are probably aware, it is only the second week of the New Year. How are you doing on your healthy-eating resolutions?

It’s OK! That’s why Sarah and I want you all to know about this gratin, which uses everything healthy you forgot you had in you fridge.
All you need to do is grab some greens like kale, chard, spinach and herbs, some leftover cooked rice, quinoa or bulgur, and some Greek yogurt.
You cook the greens with shallots in olive oil, and then add the grains, some nutty parmesan cheese and an egg. The topping is a mixture of eggs, Greek yogurt and more parm and it becomes a thick, custardy crown when spread over the top of the gratin. That’s pretty much all there is to it!
If you make this now, you will have no excuse to “forget” about your resolution until at least Monday. So go on! Clean out your fridge and fill up on greens and grains like you said you would.
