I figured I’d let the pie-baked-inside-a-cake trend sail right on by. Then, I found the Bake It in a Cake blog and changed my mind.
Last week, I read a foodaphilia post and got a look at The Flying Monkey Patisserie’s mammoth Pumpple Cake, an apple and pumpkin pie baked inside chocolate and vanilla cake. I love pie as much as the next girl, but really?
Then, I found Bake It in a Cake’s little pumpkin pies baked inside cream cheese vanilla cupcakes. Now, this is a “baked-inside” dessert I can get behind. The cinnamon-sugar pie crust topper is a nice touch, too. The recipe says you can use a store-bought pie crust for this detail, but if you’re going to make these cupcakes, it’s totally worth the effort of a homemade crust.
