Whenever you use up a jar of mustard, there are always those last little bits remaining in the jar, that no knife or spoon can possibly scoop out. Sure, you can throw it out, but why waste it? There’s a better way. Instead, use those last dregs of mustard to whip up a homemade vinaigrette.
You’ll find there’s usually about 1/2 to 1 tsp. of mustard clinging to the inside of a typical-size jar. So you should add about 2 Tbs. of your favorite vinegar–sherry, balsamic, white or red wine vinegar are all great here. Pour in about 6 Tbs. of extra virgin olive oil. Season with salt and pepper, and add any other ingredients you like, such as minced shallots or chopped fresh herbs. Screw on the lid, and shake vigorously…Voila-a clean jar, no wasted mustard, and a delicious vinaigrette for your salad.
