Instead of using kitchen shears to cut canned tomatoes in their cans, I like to use a flat-end stainless steel spatula. The sturdy spatula cuts through tomatoes all the way to the bottom of the can without having to remove each layer of tomatoes as they are cut. Using careful, steady movements, I plunge the spatula through the tomatoes until they’re the consistency I’m seeking. Works well every time.
