Herbivoracious is a wonderful vegetarian blog that’s all about using modern techniques and bold, authentic flavors. Michael, the writer and creator behind the blog has been a vegetarian since 1984. He has also written an Herbivoracious cookbook and hundreds of gorgeous recipes, like this Orecchiette with Garlic Scapes, Ricotta and Gremolata.

If you grow garlic in your garden, you surely have plenty of garlic scapes to play around with. If not, garlic scapes can be found at most farmers markets and in some grocery stores. As Michael explains in his post, garlic scapes are the central flowering stem on a garlic plant that, when cooked, have a texture similar to asparagus and that sweet, caramelized flavor of roasted garlic.

You can roast them, sauté them, bake them into frittatas and quiches or even use them raw in a pesto. But Michael’s pasta dish combines the sweet flavor of garlic scapes sautéed in butter and white wine with creamy fresh ricotta and the citrusy, herbaceous bite from the gremolata. It’s a perfect summertime meal that’s full of bold flavors and interesting textures. Give this one a try for your next quick vegetarian meal.
