Lately, I’ve been obsessing over fresh summer fruit and sugary desserts. It’s nearly impossible for me to reign in my sweet tooth. But today, my mind and stomach are honed in on salty, savory flavors, which is why I can’t stop thinking about this Asparagus Tart with Walnuts & Parmesan, featured on Not Without Salt. I don’t know which ingredient to praise first—the buttery, flaky crust, the crunchy walnuts, the sharp parmesan, or the perfectly charred asparagus spears.
Asparagus instigated many a brawl in my household (as a child, the only vegetables you could bribe me to eat were corn and peas). It’s my mother’s all-time favorite veggie, an item she prepares often with dinner, once to my disdain and now to my delight. Perhaps my palate has finally matured, because I’ve begun appreciating asparagus alongside salmon, in salads, stuffed into paninis, or blended into soup. Thanks to Not Without Salt, I’m going to add “baked on a tart” to my list of ways to enjoy the tender spears.
