Almond paste and its sweetened sister marzipan have always been in the realm of “special” desserts for me. It’s probably because both are so rich tasting and sweet, and usually only appear in stores and bakeries around the holidays.

So as I was searching for something holiday-worthy for this year’s cookie tray, I was thrilled to run across Shelby’s cookie recipe on her blog The Life and Loves of Grumpy’s Honeybunch. A simple butter dough is wrapped around a ball of almond paste, which is baked, then glazed and sprinkled. Just the flavors I’m looking for, and in a simple, yet festive, package.

I particularly like the amaretto addition in the glaze. Almost crosses the line from cookie to candy.
