You probably have a favorite kitchen gadget that you are showing to all your friends. Maybe it’s a mango splitter, or one of those can openers that leave no sharp edges, or  a silicone oven mitt. Most chefs have their favorite tools, too, whether it’s one they use every day and couldn’t live without, or one that does a particular task perfectly. Joanne McAllister Smart was curious to know what chefs’ favorite gadgets were, so she took an informal poll. You’ll be surprised at the chefs’ answers, which ranged from blenders to blowtorches.  The featured recipes put the chefs’ favorite tools to work: Tim Keating’s “Tin Can” Fried Potatoes; Zarela Martinez’ Yucatan Spice Mix; and Debra Ponzek’s Provençal Purée.
