I was really cold at work today, like shivering. And even though I layered my socks and had a thick sweatshirt and scarf on, I still felt like I couldn’t shake the chill.
Because of this, all I wanted was macaroni and cheese.
Then the guilt set in. So I decided to load my plate up with greens, chickpeas and a farro salad, to then allow myself a small scoop of warm, cheesy, comforting macaroni and cheese. And comforting it was, because it warmed me to the bone and was so, so satisfying.

Don’t feel bad about making a batch of this comforting classic. As long as your plate is balanced with plenty of leafy greens and lean protein, a scoop or two of this rich, creamy pasta dish won’t kill you.
