Making sauces can be daunting, but not when you have Martha Holmberg’s Modern Sauces by your side. Holmberg, a former Fine Cooking editor, has the perfect authoritative-yet-friendly voice as she presents 100 recipes for sauce-savory to sweet-plus more than 50 recipes for using them. Throughout, Holmberg explains in detail what is going on in a particular sauce, what you can do with it, and how you can fix it should something go wrong. Her declarations are both amusing and informative: She calls beurre blanc “the poster child for misunderstood French sauces” before explaining why it’s actually one of the easiest sauces to make. For a taste of her writing, and her amazing hollandaise sauce.
