It’s probably a bit modest to say that we’ve been having some inclement weather recently, because let’s face it, the weather lately has really sucked. And what do we do when the weather sucks? Well, we think, cook and eat one thing: comfort food. You know, the macaroni and cheese, braised stews and casseroles we all grew up on and love.

This Butternut Squash and Mushroom Chicken Pot Pie fits the comfort food bill perfectly. The recipe came from Bitchin’ Camero, a Miami-based blog written by self-proclaimed grocery store junkie, Melissa. She sautés the chicken with bacon, lots of mushrooms and onions and uses a smoked paprika-spiced butternut squash purée instead of a thick béchamel sauce. The crowning glory is a buttermilk biscuit topping that looks beautiful and provides the perfect vessel to absorb all those delicious juices.
