Do you still have Thanksgiving leftovers? Did you ever think it was possible? It’s okay…I do too, and I didn’t even cook Thanksgiving dinner this year! But don’t worry, because I’ve got a blog for you that’s all over this major leftover overload.
It’s Cupcakes and Kale Chips, and even the name of this witty food blog is fun. It says, “Have your cake, and some kale, too. Everything will be fine.”
Brianne is the hilarious, self-described Chemical Engineer-turned-stay-at-home-mom/wannabe-pastry-chef-and-wedding-planner behind the recipes and photos found at Cupcakes and Kale Chips. Like this one, her Cranberry BBQ Turkey-Stuffed Sweet Potatoes.
She takes some leftover turkey, leftover cranberry sauce, some BBQ sauce and a crunchy cheddar topping, stuffs it all inside a sweet potato and viola! Leftovers made over and served up again looking all fancy.
She’s also got some serious blog love going on at the bottom of her recipe, which gives you recipes using leftovers for every course from breakfast and brunch, to sides, salads and desserts. All together now, “Thank you Brianne!”
