Making Vibrant Mediterranean Bread Salads

Toss peak-of-the-season vegetables, fragrant olive oil, and yesterday’s bread for some spectacular summer salads

Imagine a sandwich made with ripe tomatoes, crisp cucumbers, thinly sliced onions, and fresh herbs, held between slices of a chewy, European-style bread. Now imagine ripping that sandwich into pieces and tossing it with oil and vinegar in a big bowl, and you have some idea of what a tempting combination of flavors and textures a bread salad offers.  Recipes include: Turkish Bread & Olive Salad; Panzanella (Italian bread salad); and Fattoush (Middle Eastern bread salad).
