10 Ways to Cook with Tequila

Article Image

Tequila’s a staple on the bar cart, but it’s also great to cook with. Try it in marinades for shrimp or steak, a barbecue glaze, or a syrup for fruit salad. And be sure to look beyond the familiar bright, vegetal flavors of blanco tequila; you can also explore the woody, smoky personality of reposado tequila, which complements the char of grilled foods.

  • Recipe

    Tequila-Infused Queso Fundido

In this queso fundido, the tequila not only shines through with its agave brightness, but gives the melted cheese a luscious texture. Seared salsa ingredients (tomato, onion, chile, cilantro) mingle with unctuous cheese, the whole thing shot through with that unmistakable scent of silver tequila. Queso fundido needs to be eaten as soon as it's made, either spooned into warm tortillas for soft tacos or scooped up with chips.

Pork Tenderloin with Tequila-Hot Pepper Glaze & Grilled Peaches

No time for a lengthy marinade or a complicated spice rub? In this dish, a few zesty ingredients come together for a punched up glaze, making a favorite cool weather roast into one of summer's most flavorful, quick grilled dinners.

  • Recipe

Tequila-Chipotle Shrimp Tostadas with Lime and Sour Cream

Fried corn tortillas (tostadas) are a great base for spicy shrimp and zingy sour cream. Make them when you don’t mind a little messy eating, as they’re best picked up with your hands to eat.

  • Recipe

    Tequila-Lime Chicken Thighs

Golden reposado tequila is used in this recipe for its woody, smoky personality, which complements the chipotle chile and the char of the grill. For a full, robust tequila flavor, be sure to let the chicken marinate for at least 8 hours.

  • Recipe

    Tequila Sour Sorbet with Basil

Like a frozen version of the citrus-y tequila cocktail, this light, tart sorbet is the perfect ending to a summery menu of Mexican favorites.

  • Recipe

    Margarita-Glazed Baby Back Ribs

Tequila and fresh citrus are a great combo in margaritas and also with pork ribs. The tequila’s bite and the acidic orange and lime juices cut through the rich, fatty meat. In this recipe, the marinade is transformed into both a glaze and a dipping sauce for the ribs.

  • Recipe

    Boozy Berry-Topped Tres Leches Cake

This take on the classic Mexican tres leches cake is generously topped with tequila-spiked whipped cream and sweet, juicy summer berries.

  • Recipe

Blueberry Fruit Salad with Tequila-Lime Syrup

A margarita-inspired syrup enhances the tart-sweet flavor of this summery fruit salad. For an alcohol-free version, use water in place of the tequila.
