Can it be – a tasty potato salad that’s actually healthy?? This rather unconventional riff incorporates tangy Greek yogurt with a small amount of light mayonnaise in the dressing and punches up the flavor with a tad of spicy brown mustard, as well as the freshness of lemon and the zip of a dash of red pepper. You will never miss the fat and calories! Fresh corn and other crisp, tasty vegetables, as well as the addition of fresh herbs, add additional flavor, color and texture and (don’t tell) nutrients to this wonderful dish! I have never served this dish that the recipe wasn’t requested.
