Strawberry-Orange-Vanilla Breakfast Smoothie

Not only do we like this for breakfast, but we’ve also been known to whip one up in the test kitchen when we need a little pick-me-up during a busy day of recipe testing and food styling. You’ll be surprised to taste how smooth, creamy, and tangy it is, especially considering that it contains no yogurt or other dairy products.

Tofu
8 frozen strawberries
About 1/4 lb. plain silken tofu
1/3 cup orange juice
2 Tbs. honey; more to taste
1/2 tsp. pure vanilla extract

Combine all of the ingredients in a blender and blend until smooth. Serve in a chilled glass.

Star Star Star Star Star I have to admit, I was also extremely skeptical about the tofu. I am a vegetarian and eat tofu regularly and I never imagined it would taste so delicious in a smoothie with berries. I tend to use a frozen berry mix for this recipe and it is fantastic, specially during hot summer months!
Star Star Star Star Star Okay, I made this according to the recipe with the strawberries, orange juice etc. I do not like either and orange juice hurts my stomach. So, I altered the recipe. I used blueberries and apple juice (you need to increase the number of blueberries) and it turned out devine. It will be a regular in my morning routine. Just loved it, I even sneeked it into my boyfriends breakfast without telling him it had tofu in it. He loved it too, hee hee. It is hard to get really healthy foods into him sometimes.
Star Star Star Star Star I admit, I had my doubts about the tofu, but this is really delicious! I made one before heading to the gym this morning and it was perfect. It's light but filling and has great flavor. The vanilla adds a lot of depth.
