What is it?

Anchovy paste is a mixture of ground anchovies, vinegar, spices, a small amount of sugar and water, and is sold in tubes or tins at most supermarkets. Its flavor is pungently fishy and salty because the anchovies are cured before they are ground into paste. While it enhances the flavor in a variety of dishes, from soups to pasta sauces to salad dressings, it is important to always start with a small amount and add to taste because each manufacturer and country manufactures anchovy paste with different proportions and quality of ingredients.
