What is it?

Cayenne is a very hot red chile generally sold whole and dried or dried and ground into cayenne powder.

Don’t have it?

Crushed red pepper flakes or ancho chile powder will add a similar heat.

How to store:

Cayenne powder keeps well, but loses potency and complexity as it ages. For the best flavor, replace every six months.
