What is it?

Tan, squarish fenugreek seeds are an important ingredient in Indian cuisine (as are fenugreek leaves). They’re used in many spice blends, including South Indian sambhar powder. The flavor is bitter, though their aroma is reminiscent of maple syrup; in fact, in the West, fenugreek seeds are used to make maple flavoring for commercialpancake syrup and other products.
