What is it?

Hominy is corn that has been soaked in a dilute lye solution in order to make the kernels swell, a process called nixtamalization. Whole hominy is available canned or dried, and is a common ingredient in posole and other Latin American and Southwestern dishes. In Mexican cuisine, hominy is ground to make masa, the basic ingredient of tortillas.
