Easter Eggs
comments (3) April 3rd, 2009 in GalleryWe always make these at Easter and enjoy decorating them together. We need to make them early because we send some to the grandchildren living in Canada. We always make them small, but Kelly wanted to make some really small and have a tea party with April! The recipe is another old one, I think I copied it from my mother over thirty years ago! It is an almond flavored oatmeal cookie shaped like eggs. They are buttery and amazingly delicious!

Easter Eggs
1 cup butter, 1/2 cup brown sugar, 1 tsp vanilla or almond extract, 1 egg, 3 cups flour, 1 cup oatmeal, 1/2 tsp salt
Cream butter and sugar, add egg and extract. Then mix in remaining ingredients.
Shape into 36 eggs. Bake 325 degrees - 20-25 minutes
The frosting is powdered sugar, half and half, some almond extract and food coloring. I put it in plastic bags and snip off a corner of each bag to decorate.
