This is a fry cry from the regular shrimp salad. This is bursting with flavour and served mini-sized (2 poached shrimp) on an endive spear for the right impact. It packs well for a travel like day-hike or a long road-trip, which was the inspiration behind making shrimp salad mini; to avoid fast food on road. This will curb any craving for outside food.
