No, this is not spinach ice cream! I don't really need to eat all that ice cream, so I am working on what I call my "Farm Box Challenge". My CSA box delivery just started and we are not splitting the box this year, so we have 3/4 bushel of veg every week for two adults and one kid. That's a lot of veg. However, I am determined not to waste any, so I am getting ready to can, freeze, pickle, and just generally eat a lot of veg.
Our first box included a lot of greens, with a huge bag of really lovely spinach. Here is an amazing spinach recipe from FC #49. For those of you who did the Cook the Issue challenge, it is similar to the escarole recipe, but I liked spinach much better-- probably because farm-fresh spinach is just so delicious.
