Congratulations to Veronica Vadakan, aka jiffysquid, winner of the Waste Not Challenge! Veronica really impressed us with her commitment to the 'waste not' concept—freezing onion skins, herb stems, and other bottom-of-the-crisper bits to make flavorful homemade stock for her stone soup, among other things. But it was her dandelion green salad with honey mustard dressing that really got to the heart of this challenge. She took what most of us see as a nuisance and turned it into a free meal!

For her winning entry, Veronica wins a $200 dollar gift certificate to MetroKitchen.com.

There was plenty of creativity to go around in this contest. Some of the other standouts included:

Mashed Potato Cakes   Creamy Asparagus Soup
These gorgeous little Mashed Potato Cakes with Spiced Apple Chutney by Alice_C
Creamy Asparagus and Potato Soup by MichiganDiance.

Kulebiaka   Red Mole Black Bean Soup
PieLove's use of leftover piecrust in a modified Kulebiaka.   A hearty Red Mole Black Bean Soup by eatwelleatcheap.

Thanks to everyone who participated, and keep your cookware at the ready for our next challenge which kicks off in early June.
