Tiramasu Ice Cream Cake
 
My birthday buddy at work challenged me to an ice cream cake.
 
I made a nice sponge cake in a 9" pan, then cut it in half. For the first ice cream flavor, I infused the ice cream base with ground espresso beans, did not taste strong enough to me, so I added some instant espresso powder. For the second flavor, I used the ice cream base, flavored with vanilla, and I added marscapone cheese and folded in some dark chocolate flakes.
 
I put half the sponge cake in the bottom of a 9" springform pan, used a mixture of espesso, sugar and Kaluha as a syrup to brush onto the sponge cake, added the espresso ice cream, another layer of the cake and syrup, and then the marscapone chocolate flake ice cream, topped it off with some grated chocolate and put it in the freezer overnight.
 
Everyone really loved it at work, the beauty of this cake was that as the ice cream melted, it got absorbed into the cake and not into a melted mess.
