There are two things I like about Ellie Krieger's recipes. First, they are tasty and full of healthy fresh veggies. Second, they are very adaptable (you can use a lot of different veggies) and great for incorporating all those small amounts of veggies that otherwise would go to waste. We have a CSA subscription, which provides a HUGE box of veg every week-- but sometimes at the end of the week, there is just a couple of leeks, a small bunch of kale, and a few carrots left over.
This soup was perfect for those veggies. I added the last tomatoes and string beans from the back yard, plus I simmered the soup with a few parmesan cheese rinds that I had hanging around. The result was one delicious soup! Perfect for the cold rainy Chicago weather.
