This recipe was AMAZING! Worked like a charm. The only substitution I made was using some fresh grated horseradish in the creme fraiche sauce. Perfection.

RMClasen writes: I love using fennel in my cooking and often using when cooking beef. It is great with other vegetables such as carrots. In fact at this moment I have a beef roast in the slow cooker with fennel, carrots, celery and onions. Fennel is so versatile, I have used it in stuffing, crushed the seeds and used them in a rub, and have made a basting liquid using the fennel fronds and rosemary. Posted: 5:02 pm on February 22nd
