Roasted garlic: condiment or vegetable? Answer: it doesn't matter as long as everyone eats roughly the same amount. I was out of aluminum foil, go figure, so I baked this in a little Corningware casserole dish. It could have baked a little less- it is verging on burnt. Still, we enjoyed the whole cloves with our rice and beans tonight. I'm looking forward to trying the remaining cloves in other applications. Good stuff! Also, aren't the thyme sprigs cute sticking out from between the garlic cloves like little trees?
