My bottom wasn't big enough! The "large" artichokes I got (on sale, 3 for $1) were about 5-7 oz. each. When scooped out, they were barely big enough to fit one of the shrimp, so I hooked the shrimp over the sides-- they look like some scary mutant three-tentacled octopus (triopus?). My husband groused so much about the other shrimp dish (with rice noodles) we had last week, that I made his artichoke stuffed with ground pork-- mmm. I put some of the pork stuffing on the shrimp ones too-- why should he have all the fun? He also fed the last of my parsley to our pet iguanas, so no parsley in this dish. These artichoke bottoms were very tasty-- with the little bottoms, they were a great side dish.
I have now cooked all the dishes in the artichoke feature in Issue #104 and I declare that the fritatta is the overall winner. That one I will make again, with the shaved artichoke salad as a runner-up.
