I found that the artichokes available this past week are Big Heart artichokes and WOW, big heart is right and easily 3 1/2-4 inches across which is perfect for the shrimp recipe to hold a lot of shrimp, but for me today was the tarragon vinaigrette test.
I have always loved lemon and butter with my artichokes and wasn't quite sure how I would like this recipe so I made the vinaigrette and loved it! I will make this again. Not much more than that to say except the big heart artichoke is a meal in itself from leaves to heart and a sprinkle of Parmigiano doesn't hurt.
My tarragon looks really awful so I added about 1/2 tablespoon tarragon vinegar as part of the total vinegar in the recipe along with the few leaves of tarragon that I could salvage. Works for me and I wonder if one could use just tarragon vinegar in a pinch for big tarragon flavor.
