The May Daring Cooks' Challenge (The Daring Kitchen) was to prepare enchiladas, and the optional recipe provided was Fine Cooking's Stacked Green Chile and Grilled Chicken Enchiladas. I made two versions of enchiladas, a very gourmet Crab Enchiladas con Chile Amarillo, by chef Mark Miller, and Fine Cooking's more traditional, stacked chicken enchiladas. I made some slight modifications to Fine Cooking's enchiladas, using roasted Hatch green chiles from New Mexico, roasted chicken, and Queso Anejo Enchilado cheese. Both versions were incredible!
