Cook the Issue 2010: Grilled chickpea flatbread

For this recipe, I wasn't sure how much to mash the chickpeas, so I ended up with a few whole peas here and there-- not a bad thing, they were tasty little surprises. The additions did not incorporate that well, as they are added after the first rise. However, in the course of shaping the breads, the inclusions end up getting enclosed by the dough rather nicely. The spices and charred onion add a ton of flavor-- these are like grilled, flattened onion rolls but way better. These breads are delicious and fun to make. I ran out of melted butter after brushing the first side and was too busy to melt more-- with that little bit of extra butter, these would really be over the top!
