Endive and Arugula Salad with Peaches and Marcona Almonds

This Endive and Arugula Salad, with Peaches and Marcona Almonds, is from Thomas Keller's Ad Hoc at Home.  It has Summer written all over it!  The leftover peach puree, made to go in the salad dressing, can then be added to barbecue sauce as an enhancement, and spooned over vanilla ice cream!
