S'mores Cookies

On her blog Coconut & Lime, Rachel Rappaport takes a staple of summer cookouts, s’mores, and turns it into a cookie. In addition to the adorable topping, she has incorporated ground-up graham crackers in the dough to fully evoke the taste of a s’more. These cookies look like they’d be delicious desserts for picnics, barbecues, bonfires, or camping trips.
Rachel's blog features a wide assortment of original recipes -- recent posts range from basil and oregano pork chops to sweet cherry lime jam. She is also the author of The Everything Healthy Slow Cooker Cookbook, which will be published in August. If her slow cooker recipes are as creative as her cookies, sign me up for an Amazon preorder.
