I finally had some leftover flank steak (after the third time we made that recipe), so I whipped up this sandwich as a "Mommy's Treat" on a day I work from home. And what a treat-- don't wait for leftovers to make this sandwich, it would be great with deli roast beef! I didn't have a good tomato (still a little early here in Chicago), so I used avocado instead-- very good. And the best news-- I have a little more steak hidden in the fridge for tomorrow's sandwich!
