Cook the Issue 2010: Tea-smoked salmon with nectarine lemon basil relish

I was surprise by how delicious and how easy this recipe was.  Putting together the smoking packet was trivial (watch the video) and the salmon marinated easily.  I did add a little ginger to the marinade.  I didn't have any good oranges and I gave the CSA cuke to the person I share the box with, but I had some lovely nectarines, which made a great relish with lemon basil.  This was a hit with the whole family.  My daughter immediately requested that I make it again-- she loves salmon.  The salmon was perfectly seasoned from the soy-based marinade and picked up a lot of flavor from the smoking-- much more than I expected.  Definitely a keeper recipe.  I marinated and smoked some tofu at the same time-- that will be for a weeknight dinner.
