Cook the Issue 2010: Chi Chi Pache

This was just the thing for a muggy Chicago evening. The vodka made it lighter than the typical pina colada and the cinnamon and allspice gave it an interesting flavor-- more sophisticated than just pineapple and coconut cream. I didn't spring for a bottle of pimento dram-- too expensive and hard to find-- so I just added some grated allspice with the cinnamon. Tasty! Also the pineapple juice was a bit hit with my daughter, who Loves! Little! Paper! Umbrellas!!

Though adding grated allspice probably gets you pretty close with about a tenth of the work!

So if it works for you in Chicago, it certainly will work here in hot humid NC.
