The potato salad on Friday was so good that I decided to make another variant today-- this time with a creamy dressing. This version was also excellent, albeit a bit pale in color. I used fennel and onions, plus sweet pickles and horseradish in the dressing. It was great with the pork chops. I love potato salad, so it is great to have this challenge as an excuse to make different kinds!
