Cook the Issue 2010: 100th post!! Barbary Swizzle

Yar me swabbies, to celebrate my 100th Cook the Issue 2010 post, I whipped up a batch of mint tea and concocted a few Swizzles.  We liked this one best of all the tiki drinks-- not too strong and not too sweet, this was refreshing and perfect for a hot Chicago evening.  I added a bit more seltzer to the top to make it even more refreshing.  This would make a great party drink-- you could mix up the ingredients, then just swizzle a bit with the crushed ice for each drink.  Even for individual servings, this is really easy to put together-- and no hard-to-find ingredients.  Next time, I'm going to sweeten the mint tea with honey-- I think it would really set off the flavor of that little bit of dark rum.  

Ahoy!  I'll be taking a little break from the Challenge to sail the seven seas (or splash in the seven lakes), but I'm looking forward to seeing what everyone else concocts over the next couple of weeks!

Wow 100 that is a great accomplishment.

Looks refreshing, think I might try one of these this weekend. Going on a kayaking adventure on Cape Cod in August, will see if these are worthy of the "signature drink" I usually bring.

By the way, your yard looks great. Bill (aka Stogie) and I are dying to come to Chicago, maybe next summer. We could meet for a Tiki drink.
