I’ve been thinking about ice cream a lot lately. 1) Here in the Northeast, we experienced back-to-back heat waves and fetching the ice cream seemed as good an excuse as any to stand in front of an open freezer. 2) FineCooking.com recently revamped our Ice Cream Recipe Maker and well, I just had to test it out, right? and 3) Do I really need a third? We’re talking about ice cream, here.
Browsing one of my favorite blogs, Tara O’Brady's seven spoons, I found what I thought was the most beautiful ice cream I’d ever seen, until I realized it was really Frozen Raspberry Eton Mess—even better than ice cream because it includes lemon curd and crumbled meringues. Even better than ice cream because Tara’s version is ice cream with a British accent, and who doesn’t love a British accent?
The traditional recipe's name: Eton, for Windsor’s Eton College, and Mess, perhaps to describe the dish’s presentation, though Tara’s is anything but a mess. A quick search revealed that Tara has the loveliest "mess" out there. Sorry, Nigella.
If you’re craving something even better than ice cream right about now, do check out seven spoons. Her recipe is “immensely lickable,” so Tara encourages you to use sugar cones, but you can also freeze the mixture in ramekins.
